JIFFY REUBEN CASSEROLE 
1 lb. sauerkraut, drained
1/4 lb. onions, chopped
2 tbsp. parsley
1 tsp. caraway seed
1 (8 oz.) pkg. Swiss cheese, shredded
2/3 c. Thousand Island dressing
1/2 lb. corned beef, chopped
3 slices pumpernickel bread, cut into 1/2 inch cubes
1/4 c. butter, melted

Combine sauerkraut, onions, parsley, caraway seed; mix well. In a 2-quart casserole dish layer sauerkraut mixture, 1/2 of cheese, 1/3 cup dressing, and corned beef. Repeat layers. Top with bread mixed with melted butter. Bake at 375 degrees for 35 to 40 minutes. Serves 4.
