OLD FASHIONED GINGER SNAPS 
1 c. sugar
1 c. dark molasses
1 egg
1 c. shortening
2 1/2-3 tsp. ginger to taste
2 tsp. baking soda in 1 tbsp. boiling water
1/4 tsp. salt
4 c. all-purpose flour

Cream sugar, molasses, egg and shortening. Add soda mixture. Mix ginger, salt and flour. Add to creamed mixture. Little at a time. Roll into small balls. Press on cookie sheet and bake at 250 degrees for 15-20 minutes. Cookies will harden as they cool. Yield 10-11 dozen.
