ZUCCHINI-PINEAPPLE BREAD 
3 eggs
1 c. salad oil
2 c. sugar
2 tsp. vanilla
2 c. shredded zucchini
1 (8 oz.) can drained crushed pineapple
1 c. chopped walnuts
1 c. raisins
3 c. flour
2 tsp. baking soda and 3/4 tsp. nutmeg
1 tsp. salt
1/2 tsp. baking powder
1 1/2 tsp. cinnamon

Beat eggs to blend. Add salad oil, sugar, vanilla and beat until thick and foamy. Stir in zucchini, pineapple. Add flour, soda, salt, baking powder, cinnamon and nutmeg. Blend well. Stir in nuts and raisins. Stir until blended well. Put in 2 greased loaf pans. Bake at 350 degrees for 1 hour. Cool slightly then remove from pans. (If large zucchini remove centers).
