SOFT MOLASSES COOKIES 
1 c. molasses
1/2 c. shortening
1/2 c. sugar
1/2 c. evaporated milk, with 1 tsp. vinegar
3 tbsp. sugar
2 eggs
2 tsp. ginger
1 3/4 tsp. baking soda
Pinch of salt
3 c. sifted flour

Mix all ingredients in order given except flour. Stir in flour until mixture is thick enough to hold a spoon upright. Drop by teaspoon. Place onto greased and floured cookie sheets placing 1 1/2 inches apart. Flatten with wet cloth wrapped over bottom of tumbler. Sprinkle with additional sugar. Bake at 400 degrees for 10 to 15 minutes. Yield 4 dozen cookies.
