SOFT MOLASSES COOKIES 
1 c. molasses
1 c. sugar
1 c. melted shortening
1 tsp. vanilla
1 egg

Mix together well and add:

2/3 c. boiling hot coffee
4 tsp. baking soda

Sift 5 cups flour with:

1 1/2 tsp. cream of tartar
1 tsp. salt
1/2 tsp. cinnamon

Mix all together and cool in refrigerator for about 4 hours.

Remove from refrigerate and roll out about 1/3 of the dough on a lightly floured board. Cut with a large cookie cutter and bake on a cookie sheet for about 10 to 15 minutes, being sure to grease the cookie sheet first. Cool on a rack. Bake at 400 degrees.
