ARTICHOKE AND RICE SALAD 
This salad is tastier, if made a day ahead of time.

1 pkg. UNCLE BEN'S® white and wild rice mix
2 green onions, chopped fine
1/2 green pepper, chopped fine
2 jars artichoke hearts
1/2 c. Hellmann's mayonnaise
1/4 tsp. curry powder or cayenne
Paprika

Cook rice - omit the butter and cool. Add onions, pepper, mayonnaise, curry or cayenne and mix well. Add artichoke hearts (I find it better to separate the leaves and the heart by hand, allowing you to choose the tender leaves and cutting the hearts smaller). Add liquid left in jars. Mix well. Store covered in refrigerator until ready to serve. When you take salad out to serve, sprinkle generously with paprika.
