ITALIAN "VEGIE" TOSS 
1 1/2 c. shell (sm.) macaroni
2 c. broccoli flowerets
1 c. cauliflower flowerets
1 c. fresh mushrooms, sliced
1/2 c. onions, chopped (red or green)
1 med. avocado, sliced
1 (6 oz.) can artichoke hearts, rinsed and chopped
1 c. sliced, pitted ripe olives
2/3 c. Italian salad dressing
1 med. tomato, chopped

Cook macaroni according to package directions; drain. Rinse with cold water; drain well. In large bowl, combine macaroni, broccoli, cauliflower, mushrooms, artichoke hearts, ripe olives and onions. Toss with Italian dressing. Cover and chill several hours. At serving time, toss vegie mixture with avocado and tomato. Enjoy!
