SWEET-SOUR PORK RIBS | |
3 lbs. pork ribs 1 1/2 tsp. salt 1/2 tsp. pepper 1 (1 lb. 4 oz.) can pineapple chunks, drained 2 green peppers, cut in strips 2 tbsp. cornstarch 1/3 c. soy sauce 1/2 c. sugar 1/4 c. vinegar Cover ribs with cold water; bring to boil, simmer 10 minutes. Drain; rinse in cold water. Place in roasting pan; sprinkle with salt and pepper. Bake in very hot oven (450 degrees) for 15 minutes, until lightly browned. Pour off fat. Add pineapple and peppers. Bake 10 minutes. Combine remaining ingredients and juice from pineapple; cook until clear, stirring constantly, pour over ribs; bake 10 minutes longer. Makes 6 servings. Variation (for crispier ribs) : Bake uncovered in shallow pan in hot oven (400 degrees) 45 minutes, drain - reduce heat to 350 degrees; add 1 cup sauce and pineapple. Bake 30 minutes. Turn meat, bake 10 minutes; add peppers mixed with remaining sauce. Bake 20 minutes. |
