MY FAVORITE MEAT LOAF
2 lbs. ground beef
1 med. onion
2 eggs, lightly beaten
1/4 tsp. pepper
1/4 c. cracker crumbs
1 (8 oz.) can tomato sauce, divided
1/4 c. brown sugar
1 tsp. prepared mustard
1 1/2 tsp. salt

Microwave oven on high power 12 to 14 minutes. In small bowl, combine all tomato sauce, brown sugar and mustard. Set aside. In large mixing bowl, add eggs, onion, cracker crumbs, ground beef, salt and pepper. Combine. Add 1/2 of tomato sauce mixture and stir thoroughly. I use my hand to get it mixed good. Place meat mixture in microproof round casserole. Pour remaining tomato sauce over top of meat. This helps to brown meat loaf. If you don't have a round casserole with a hole in the middle place a small glass in the middle of the dish you use. This helps distribute the heat better. You may find that crumbled melba toast gives this a better flavor. I haven't tried it though. Also you may like to add a small amount of green pepper to this recipe. Drain off any excess fat before it gets completely cool!

Since microwave ovens vary in power, you may need to adjust your cooking time.
