CARROT CASSEROLE | |
3 c. carrots, peeled and cut 10 soda crackers, crushed 2 tbsp. minced onion 2 tbsp. melted butter 1/2 tsp. salt 1/8 tsp. pepper 1/2 c. shredded Cheddar cheese Boil carrots in salted water until very soft. Drain and save 2/3 cup of the liquid. Mash cooked carrots, stir in crackers, onions, butter, salt and pepper; add saved carrot liquid. Put in a greased casserole, cover with shredded cheese and bake in 350 degree oven for 15 minutes. Serves 4. |
