CARROT CASSEROLE 
3 lbs. carrots
1/4 c. brown sugar
1 tbsp. minced onion
Salt to taste
1 c. shredded sharp cheese
1 c. evaporated milk
1 stick butter for topping
1 tube Ritz crackers for topping

Cook carrots and mash. Add next 5 ingredients and mix well. Melt stick of butter and add Ritz crackers. Spread over carrot mixture. Bake 35-40 minutes at 350 degrees in a 9x13 inch pan.
