GRITS CASSEROLE 
1 1/4 c. uncooked grits
1 c. milk
5 c. water
1/2 c. chopped onion
1/4 tsp. salt
1/4 tsp. pepper
2 oz. shredded sharp Cheddar cheese
1 egg or 1/2 c. frozen egg substitute, thawed

Boil water and stir in grits, onion, salt, and pepper gradually. Reduce heat, simmer uncovered, 20-25 minutes or until thick, stir occasionally. Then remove from heat.

Combine milk and egg in a bowl and gradually stir into grits mixture. Add cheese. Blend well. Pour into greased baking dish. Bake at 375 degrees for 45 minutes or until set.
