LEFSE 
8 c. potatoes, riced or mashed
1 c. shortening (1/2 c. Crisco, 1/2 lard or butter)
1/4 c. whipping cream or half & half or Carnation milk
1 tsp. salt
1 tsp. sugar

Boil potatoes, rice or mash. Add salt, sugar and shortening and cream or milk. Chill until entirely cold. Chill in refrigerator overnight. To 4 cups of potatoes add 1 cup of flour or more, enough to roll your dough easily. Roll out dough to any size you like and fry it until golden brown.
