GREEN BEANS AMANDINE | |
2 lbs. fresh green beans 1 sm. ham hock 1 c. water 1/3 c. onion, minced 2/3 c. slivered almonds 3 tbsp. butter, melted 1 tsp. salt Remove strings from green beans; cut beans into 1 1/2 inch pieces and wash thoroughly. Place in a 5-quart Dutch oven; add ham hock and water. Bring to a boil; then reduce heat. Cover and simmer for 1 hour. Drain off excess liquid. Saute onion and almonds in butter until onion is tender. Add to beans, along with salt; toss lightly. Yield 8 servings. |
