LOUISIANA RED BEANS 
1 lb. red beans
1 c. diced onions
1 c. diced green onions
3 cloves garlic
Salt & cayenne pepper to taste
Pinch of sugar
2 tbsp. parsley for garnish
2 smoked ham hocks
4 c. cold water
4 tbsp. oil
1/2 lb. smoked sausage, cut into 1/2" slices

Wash beans well, remove any discolored beans. Soak in water overnight and drain. In a 4 quart pot saute all seasonings and sausage in oil, until done (5-10 minutes). Place beans in pot with all ingredients, covering with cold water, approximately 1 1/2 inches over contents. Bring to rapid boil, reducing heat to simmer. Stir periodically. Cook until beans are tender and creamy (approximately 2 hours). Add water if necessary to retain consistency. Season to taste. Serve over rice. Serves 8.
