POPULAR NOODLE PUDDING 
3 eggs, separated
1/2 c. sugar
1 tsp. lemon rind
Juice of 1 lemon
1 c. sour cream
12 oz. cottage cheese (sm. curd)
1/2 tsp. salt
1/2 lb. noodles (broad or med.), cooked and drained

Preheat oven to 350 degrees. In mixing bowl, beat egg yolks until lemon colored. Add sugar, lemon rind and juice, sour cream, cottage cheese, and salt. Add noodles; mix well. Beat egg whites until stiff and fold into noodle mixture. Spread in greased casserole or baking dish and bake 45 minutes or until golden brown. If desired, add medium size can crushed pineapple.
