BROWN RICE WITH VEGETABLES | |
1 tbsp. Puritan or olive oil 1 med. onion, chopped 3 carrots, sliced 2 celery stalks, sliced 1 c. brown rice 2 c. chicken broth 1 tbsp. chopped parsley Salt and pepper to taste 1/2 c. fresh mushrooms Heat oil in large frying pan; saute onions, carrots, and celery. Then add rice and stir. Add broth, parsley, salt and pepper. Cover and cook about 40 minutes. Add mushrooms and cook 5 more minutes. (Can add soy sauce if desired.) |
