LOW CALORIE BROWN RICE AND
VEGETABLE MEDLEY
 
2 tsp. olive or vegetable oil
1 sm. clove garlic
1/2 c. sliced mushrooms
1/2 c. sliced zucchini
1 c. cooked brown rice
1/8 tsp. pepper
1/2 c. chopped scallions
1/4 c. diced red bell pepper
1 tbsp. soy sauce

In a 9 inch skillet over medium heat, heat oil, adding scallions and garlic. Saute until softened. Add mushrooms, zucchini, red pepper, and saute until pepper is tender (about 5 minutes). Add rice, soy sauce, and pepper. Stir. Cook until mixture is heated through, stirring frequently. Makes 2 servings.
