BROWN RICE VEGETABLE CASSEROLE 
2 1/2 c. water
1 bunch fresh broccoli
1/4 c. celery, sliced
1/2 tsp. soy sauce
7 oz. can green chile sauce
2 chicken bouillon cubes
1 sm. head cauliflower
1/4 lb. mushrooms, sliced
3 tbsp. sunflower seeds
4 oz. shredded Jack cheese
1 c. brown rice
2 med. zucchini
1/4 c. each green onion and carrots, shredded
4 oz. Cheddar cheese

Steam rice with bouillon cubes. Steam vegetables until tender; add carrots, green onion, soy sauce and cooked rice. Spread rice mixture in shallow baking dish and top with salsa, veggies and cheese. Bake for 15-20 minutes at 350 degrees. Top with sunflower seeds and serve
