BANANA DROP COOKIES 
1 1/4 c. granulated sugar
2/3 c. shortening
1 tsp. vanilla
2 eggs
1 c. mashed bananas (3 to 4)
2 1/4 c. all-purpose flour
2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. baking soda
1/4 c. granulated sugar
1 tsp. cinnamon

Cream sugar, shortening and vanilla until light and fluffy. Add eggs and beat well. Stir in bananas. Combine flour, baking powder, salt and soda. Mix into creamed mixture. Chill 30 minutes. Drop by spoonfuls 2 inches apart on greased cookie sheets.

Mix sugar and cinnamon; sprinkle over cookies. Bake in 400 degrees oven 8 to 10 minutes or until lightly browned. Makes a moist, soft, cake-like cookie. Makes about 5 dozen.
