SPECIAL CHICKEN SALAD | |
3 c. water 1/4 tsp. rosemary 1/4 tsp. salt 2 lbs. chicken breasts, skinned 1/2 c. chopped green pepper 1 (11 oz.) can mandarin oranges, drained 1/2 c. reduced-calorie mayonnaise 3 tbsp. slivered almonds, lightly toasted 1 tbsp. lemon juice 2 kiwi Lettuce leaves Bring water, rosemary, and salt to a boil. Add chicken. Return to a boil; cover, reduce heat and simmer 20 minutes or until tender. Drain chicken; let cool. Coarsely chop chicken. Add next 5 ingredients and mix well. Cover and chill 2-3 hours. Peel kiwi; cut into 1/4 inch slices. Cut slices in half; stir into salad just before serving. Serve on lettuce leaves. 217 calories per serving. Serves 8. |
