SPECIAL LETTUCE SALAD 
1 lg. head lettuce
1/2 c. mayonnaise
1/4 tsp. curry powder
1/2 c. cooked chicken breast or shrimp
1/4 c. chopped celery
3/4 c. sliced water chestnuts
1/2 c. chopped onion
1 c. grated low fat cheddar cheese
Tomato wedges

Combine (light) mayonnaise, curry powder. Toss with water chestnuts and onion. Add to lettuce shell or lettuce broken into pieces. Chill several hours. Just before serving, slice lettuce shell into wedges. Top with cheese, tomato wedges. May top with salsa or chili sauce (optional).
