CHEESE DATE PASTRIES 
1 (7 1/2 oz.) pitted dates (chopped)
1/2 c. brown sugar
1/4 c. water
1/2 c. butter
1/4 lb. sharp Cheddar cheese (grated)
1 c. self-rising flour

Cook dates, sugar, water over low heat, stirring constantly until soft. Cool. Cream shortening and cheese. Blend in flour. Chill for at least 1 hour. Roll 1/8 inch thick on floured board. Cut into rounds.

On half of round place 1 heaping teaspoon date filling. Cover each with another round pastry. Press edges together with a fork. Bake at 350 degrees for 15 minutes (18 cookies).
