GOURMET BLACKBERRY COBBLER 
2 tbsp. cornstarch
1 c. sugar
1 tbsp. lemon juice
4 c. blackberries

Stir together and add 1/4 cup water. Pour into 8 inch cast iron skillet.

Mix in separate bowl: 1/2 c. sugar 1 tsp. baking powder 1/2 tsp. salt 3/4 stick cold, unsalted butter

Blend until mixed fine. Add 1/4 cup boiling water and stir. Bring fruit to a boil on top of the stove. Drop spoonful of the dough on boiling mixture. Bake at 400 degrees for 20 to 25 minutes. Put pan under to catch overflow.
