APPLE HONEY BRAN MUFFINS 
1/2 c. honey
1/2 c. safflower oil
1 tsp. pure vanilla extract
2 eggs
1 c. bran
1 1/2 c. whole wheat flour
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 c. buttermilk
1 3/4 c. apple, finely chopped (preferably Cortlandt)
1/2 c. raisins
1/2 c. currants

Preheat oven to 375 degrees. In a bowl, beat honey and oil together. Add vanilla and eggs. Beat well. Put bran in a separate bowl. Sift flour, baking powder, baking soda, and salt into bowl with the bran. Add to the oil mixture in thirds with buttermilk. Do not over mix. Fold in apples, raisins and currants. Fill muffin tins 3/4 full. Bake in 375 degree oven for 20 to 25 minutes. Let cool in muffin tins for 10 minutes before removing. Serve warm with sweet unsalted butter.
