APRICOT-APPLE BRAN MUFFINS 
1 1/2 c. flour
1/2 c. granulated sugar
1/2 tsp. cloves
1/4 tsp. salt
1/2 c. chopped, dried apricots
3/4 c. liquid non-dairy Coffee Mate creamer
3 tbsp. vegetable oil
1/2 c. bran flake cereal, crushed
1 tbsp. baking powder
1 tsp. cinnamon
1 c. peeled, shredded apple
1 egg

CRUNCHY BRAN TOPPING:

1/3 c. bran flake cereal
1 tbsp. packed light brown sugar

In large bowl, combine flour, bran, sugar, baking powder, cloves, cinnamon, and salt. Add apples and apricots. Mix well with fork until apples and apricots are separated and well coated with flour. Set aside.

In small bowl, combine egg, Coffee Mate creamer and oil. Add liquid ingredients to dry ingredients, stirring just until moistened. Spoon into 12 lined muffin cups, 3/4 cup full. Sprinkle Crunchy Bran Topping over batter.

CRUNCHY BRAN TOPPING: In small bowl, combine bran flake cereal, crushed and brown sugar. Bake at 375 degrees for 20-25 minutes.
