APPLE AND OAT BRAN MUFFINS 
1 1/4 c. whole wheat flour
1 c. oat bran
1/3 c. brown sugar, packed
2 1/2 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1/4 tsp. ground nutmeg
1/4 tsp. ground cinnamon
1 c. buttermilk
2 egg whites
2 tbsp. cooking oil
3/4 c. apple, peeled & shredded
Nonstick spray coating

In medium bowl, stir together flour, oat bran, brown sugar, baking powder, baking soda, salt, nutmeg and cinnamon. Set aside. In small bowl, combine buttermilk, egg whites and oil. Add to dry ingredients; stir just until moistened. Stir in shredded apple. Store batter, tightly covered, in refrigerator for up to 5 days. Spray muffin cups with nonstick coating. Spoon in 1/4 cup batter. Bake at 375 degrees, 18 to 20 minutes.
