COCONUT CREAM PIE 
1/2 c. sugar
3 tbsp. cornstarch
1/4 tsp. salt
3 egg yolks, beaten slightly
1 c. shredded coconut
1 c. evaporated milk & 1 c. water or 2 c. of any milk (skim can be used)
1 1/2 tsp. vanilla

Mix the first 5 ingredients thoroughly in a saucepan (I use skillet). Stir in gradually the evaporated milk and water or regular fluid milk. Cook and stir over medium heat until thickened. Beating it then with a spoon will make it lighter. Add vanilla and beat. Pour into prepared pie crust.
