CANNED APPLE PIE FILLING 
12 qts. sliced apples
4 lbs. sugar (or 7 cups)
1 c. cornstarch
2 tbsp. allspice
1 tsp. nutmeg
1/2 tsp. salt
1 tbsp. cinnamon

Mix sugar, cornstarch, all spice, nutmeg, salt and cinnamon together. Add to apples. Cook until apples are tender. Put in quart jars and process in cold packer. Process 1/2 hour after water comes to boil. Makes 7 to 8 quarts. As apples cook down, I add more to the pan (which accounts for the 8th quart).
