BANANA NUT BREAD | |
2 eggs, beaten 1 c. sugar 1/2 c. shortening 2 c. flour 1/4 c. buttermilk 1/4 tsp. salt 1 tsp. baking soda 1 c. mashed banana (about 3), well ripened 1/2 c. chopped nuts In large mixing bowl, beat eggs, add sugar and shortening. Beat until creamy. Add buttermilk and mix flour, salt and add alternately with mashed banana. Add chopped nuts. Pour into well greased loaf pan. Bake 50 - 60 minutes in 350 degree oven or until an inserted toothpick comes out dry. Can be baked in two 7 1/2 x 3 1/2 x 2 1/4 inch pans. Variation: Add 1/4 cup chopped maraschino cherries and 1/2 cup chopped dates. Variation: Let the bread rise in the 9 x 5 inch pan 1 hour before baking. |
