APPLE COFFEE CAKE 
1 1/4 c. sifted flour
1 tsp. baking powder
1 tbsp. sugar
2 tbsp. milk
4 medium apples, pared and cut into 8th's
1/2 tsp. salt
1/2 c. butter
1 egg yolk-slightly beaten or
1 whole egg (reduce milk to 1 tbsp.)

TOPPING:

3/4 c. sugar
1/2 tsp. cinnamon
1 1/2 tbsp. flour
2 tbsp. butter

Sift flour, baking powder, sugar, salt. Cut in butter as if for pie crust. Add egg yolk (or whole egg) combined with milk. Mix thoroughly. Press into 9 x 13 pan (for thinner crust) Arrange apples in rows on dough. Mix sugar, cinnamon and flour with butter until crumbly. Sprinkle over apples. Bake at 375 degree oven for 30 minutes.

For a thicker crust, use smaller pan.
