SQUASH CASSEROLE 
1 1/2 squash
1 med. onion
1 can green chilies
2 tbsp. butter
2 tbsp. flour
1 tsp. salt
1/4 tsp. pepper
1 1/2 c. grated cheese (Monterey)
1 egg
1 c. cottage cheese
1/2 c. Parmesan cheese
2 tbsp. parsley

Peel and slice squash and onion in butter. Stir in chilies, flour, salt and pepper. Put in 2 quart baking dish. Sprinkle on your grated cheese. Combine egg, cottage cheese and parsley. Pour over grated cheese. Bake uncovered for 25-30 minutes at 400 degrees until cooked and brown.
