MANHATTAN MEATBALLS 
2 lb. ground beef
2 c. soft bread crumbs
1/2 c. chopped onion
2 eggs
2 tbsp. parsley
1 tsp. salt

Mix lightly; shape into 1 inch balls. Brown and drain. Place in 2 quart casserole. Combine 1 (10 ounce) apricot preserves and 1/2 cup barbecue sauce. Pour over meatballs; bake at 350 degrees for 30 minutes. Stir occasionally. Makes about 4 dozen.

To make ahead, prepare except for baking. Cover; seal well and freeze. When ready to use, thaw 6-8 hours in refrigerator. Uncover and bake at 350 degrees for 1 hour or put in crock pot for 4-5 hours.
