SPINACH BALLS 
2 boxes frozen chopped spinach
2 c. Pepperidge Farm herb stuffing mix
4 beaten eggs
1/2 lb. melted butter
1/2 tsp. salt
1/2 tsp. thyme
1 chopped onion
1/8 tsp. pepper
1/2 c. grated Parmesan cheese

Saute onions in butter. Mix all ingredients in onion mixture. Will be wet and moist. Shape into balls (size of walnuts). If hard to handle set in refrigerator for a while until easy to handle. Set on cookie sheet, will fill cookie sheet. Bake at 350 degrees for 12 minutes. Can be frozen after baked then heat at low temperature.
