SPICY PUMPKIN MUFFINS | |
1 1/2 c. all purpose flour 6 tbsp. sugar 1 tbsp. baking powder 1/2 tsp. salt 1/2 tsp. ground cinnamon 1/2 tsp. ground nutmeg 1/2 c. golden raisins 1/4 c. butter 1 c. pumpkin puree (fresh or canned) 1/2 c. milk 1 lg. egg Heat oven to 400 degrees. Generously grease 12 muffin cups. In a large bowl with a fork combine flour, sugar, baking powder, salt, cinnamon and nutmeg. Stir in raisins. In a 1-quart saucepan, melt butter. Cool slightly. Stir in pumpkin, milk and egg. Stir liquid into flour mixture just until moistened; batter will be lumpy. Divide batter among the greased cups. Bake 15 to 20 minutes or until tester comes out clean. Remove and serve warm. Makes 1 dozen. |
