OATMEAL CAKE 
1 c. 3 minute oats
1 1/2 c. boiling water
1 c. brown sugar
1/2 c. cooking oil
1 c. brown sugar
1 c. white sugar
2 eggs
1 1/3 c. flour
1/2 tsp. salt
1 tsp. each cinnamon, soda & vanilla
1/2 c. raisins

Pour boiling water over oats and raisins; set aside. Cream sugar and shortening until fluffy. Add eggs, one at a time, beating well. Add oatmeal water mixture. Sift dry ingredients together and beat well. Bake in 13 x 9 x 2 inch pan well greased and floured at 350 degrees for 30-35 minutes.

TOPPING:

1 stick butter
1/2 c. evaporated milk
1 c. chopped nuts
1/2 c. brown sugar, packed
1 c. coconut

Melt butter. Add sugar and milk. Bring to boil for 1 minute. Pour over cake.
