PINEAPPLE PRINCESS RING | |
1 c. self rising corn meal 1 c. self rising flour 1/2 c. shortening 1 c. packed light brown sugar 1 c. walnuts, chopped 1 can crushed pineapple, with syrup 2 eggs 1 tsp. vanilla Grease with solid shortening a 6 1/2 cup ring mold. Preheat oven to 375 degrees. Mix together flour and meal. Cut in shortening until mixture is crumbly. Stir in brown sugar, walnuts, pineapple, eggs, and vanilla until well blended. Pour into pan. Sprinkle walnuts on top. Bake 35-40 minutes. Let cool 10 minutes. Then run spatula around edge and remove. Serve warm or cold. |
