PINEAPPLE-SWEET POTATO RINGS 
1 lg. can sliced pineapple, drained well on paper towels
2 c. cooked sweet potatoes, drained well
3/4 c. brown sugar
1 tsp. vanilla flavoring
1 tsp. lemon flavoring or 2 tbsp. lemon juice
Any spice needed to add flavor desired

Cream sweet potatoes. Add brown sugar and flavorings. Potatoes should be cold and stiff before making into haystack shape on pineapple slices. Add cherry on top for garnish. These are excellent for buffet and can be done ahead and placed in refrigerator.
