CARROT CAKE 
1 1/2 c. cooking oil
2 c. sugar (can be 1/2 white, 1/2 brown)
4 eggs
3 c. flour
1 tsp. vanilla
1 tsp. salt
2 tsp. baking soda
2 tsp. cinnamon
2 c. grated carrots
1 c. nuts (optional)

Mix all ingredients together. Batter will be stiff. Pour into angel food cake pan or bundt pan. Bake 1 hour at 325 degrees. Does not need frosting.
