CARROT CAKE 
1 1/3 c. sugar
1 c. oil
4 eggs
3 c. cooked or grated carrots
2 1/2 c. flour
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt

Beat together. Bake at 350 degrees for 1 hour or until done. Tube pan (optional) 1 cup chopped walnuts and/or 1 cup raisins.
