GRANDMA'S CARROT PINEAPPLE CAKE 
2 c. flour
2 tsp. baking powder
2 tsp. baking soda, level
1 tsp. salt
1 tsp. cinnamon
2 c. sugar (1 brown and 1 white)
1 1/3 c. cooking oil
4 eggs
2 c. carrots, shredded
20 oz. can crushed pineapple, well drained
1 1/3 c. chopped walnuts

Sift flour, baking powder, soda, salt, and cinnamon together. Then add sugar. Mix well. Add remaining ingredients and stir until well mixed.

Pour into greased and floured layer cake pans, or flat 12 x 16 (also greased and floured). Bake at 350 degrees for 40-50 minutes or until testing done. Frost only when completely cooled.

FROSTING:

1 cube soft butter
1 (3 oz.) pkg. cream cheese
1 tsp. vanilla
2 1/2 c. powdered sugar

Beat together.
