GREAT GRANDMA'S SHEEP - WAGON
CARROT CAKE
 
It is a good tasting, rich-looking, moist, sturdy little pioneer cake. It is fine for every meal, including breakfast, when it is good warmed.

1 1/3 cups sugar
1 1/3 cups water
1 cup raisins (or chopped candied fruit)
1 tbsp. butter
2 large finely grated carrots
1 tsp. cinnamon
1 tsp. clove
1 tsp. nutmeg
1 cup chopped walnuts
2 1/2 cups sifted flour
1/2 tsp. salt
1 tsp. baking soda
2 tsp. baking powder

Simmer first 8 ingredients together for 5 minutes in a medium size saucepan. Cover and let it set for 12 hours (no shorter time allowed). Then add last 5 ingredients.

Bake in 2 oiled loaf pans or 1 tube pan at 275°F (slow) for 2 hours. Cool, then foil wrap.
