CARROT CAKE 
2 c. and 1 tbsp. flour
2 c. sugar
1 1/4 tsp. baking soda
1/4 tsp. salt
2 tsp. cinnamon
1 1/2 c. cooking oil
5 extra lg. eggs
3 c. carrots (finely chopped)
1/2 c. walnuts chopped (optional)
Frosting (for 2 cakes) 12 oz.

The above ingredients are for a large cake, if a smaller cake (for 12 people) cut the ingredients in half.

Mix and sift dry ingredients in mixing bowl, with mixer on low - add oil and blend 1 minute.

Add eggs one at a time and mix for 30 seconds each on low speed. Add carrots, mix in low speed for 20 seconds. Bake at 350 degrees for approximately 50 minutes in greased 9 x 13 x 2 inch pan. Very good for potlucks.
