CARROT SALAD WITH RAISINS & NUTS | |
4 lg. carrots 1/2 c. raisins 1/2 c. coarsely chopped pecans 3/4 tsp. salt Black pepper 2 tsp. grated lemon peel 1 tbsp. lemon juice 1 c. sour cream Scrub well 4 large carrots. Place them on ice for 1 hour. Grate them coarsely into a bowl, add and mix lightly: raisins, pecans, salt, pepper, lemon peel and lemon juice. Place salad in a bowl, pour sour cream over it and toss well. 4 servings. |
