MAPLE APPLE JAM 
3 qts. finely chopped apples
6 c. sugar
1 c. maple syrup
1 tsp. cinnamon
1/2 tsp. allspice
1/2 tsp. nutmeg
1/4 tsp. cloves

Combine all ingredients in a pot. Bring to a boil and cook rapidly, stirring constantly, until mixture comes off spoon in a sheet. Pack hot into jars leaving a 1/4 inch space at the top. Process 10 minutes in a boiling water bath. Yields about 8 cups.
