MINI CHEESECAKES 
2 (8 oz.) pkg. cream cheese
2 eggs
3/4 c. sugar
1 tsp. vanilla
24 Keebler vanilla wafers
1 can favorite pie filling
whip cream for topping

Mix cheese, eggs, sugar and vanilla until creamy. Put 24 wafers flat side down in paper-lined muffin tins. Put 1 tablespoon of cream cheese mixture over each.

Bake at 375°F for about 15 minutes. They will not brown; do not overbake. Put 1 teaspoon of pie filling on each and refrigerate.

Note: These are great for carry-in dinners (hint, hint) or get together as they travel very well in the paper cups.
