CARROT CAKE WITH CREAM CHEESE
ICING
 
2 c. sugar
2 tsp. baking soda
3 tsp. cinnamon
4 eggs
1 c. chopped nuts
2 c. flour
1 tsp. salt
1 1/2 c. vegetable oil
3 c. grated carrots
1 tsp. vanilla

Sift together flour, sugar, soda, salt, and cinnamon. Stir in oil. Add eggs, one at a time, mixing well after each addition. Add carrots, nuts, and vanilla. Mix thoroughly. Pour into greased and floured 13 x 9 inch pan. Bake at 350 degrees for 30-35 minutes. Cool in pan. Spread with Cream Cheese Icing. Serves 16-18.

CREAM CHEESE ICING:

1/2 c. melted butter
1 (8 oz.) pkg. cream cheese
1 tsp. vanilla
1 lb. box confectioners sugar

Combine butter, cream cheese and vanilla, mixing well. Gradually add confectioners sugar, beating until smooth.
