NAN KHATAI (Indian Coconut
Cookies)
 
2 1/4 c. flour
1 1/2 tsp. baking powder
1/2 tsp. ground cardamom
1/2 tsp. salt
1 1/4 c. superfine sugar
1 c. (2 sticks) butter, softened
2 eggs, beaten
Granulated sugar
Shredded coconut

Sift together the flour, baking powder, cardamom, and salt. Beat together the superfine sugar and butter until the mixture is pale and fluffy. Gradually beat in the eggs, adding a little flour between each addition. Then fold in the remaining flour.
