ICELANDIC FISH FEAST 
6 filets fish (preferably orange roughy)
1 c. ranch dressing
1 c. buttermilk
1 c. broccoli
1 c. onions
1 c. mushrooms
1 c. Cheddar cheese, grated

Place filets in 9 x 13 baking pan. Saute' separately the vegetables of your choice. Pour these vegetables over the filets. Pour ranch dressing over fish evenly. Add buttermilk and bake at 325 degrees for 20 minutes. Add cheese and cook an additional 20 minutes. Serves 6 to 8.
