JAMBALAYA 
2 cans tomatoes
2 c. onion
1/2 c. bell pepper
1 sm. stewed chicken (deboned)
8 c. chicken stock (from stewed chicken)
1/4 c. parsley
2 lbs. sliced smoked sausage
1 tsp. salt
1 tbsp. garlic
3 c. rice, cooked
Dash red cayenne pepper

Boil the chicken; remove after done and debone. To the stock add the tomatoes, onions, bell pepper, parsley and salt and pepper and simmer for 15 minutes. Then add the deboned chicken and sausage and simmer for 1 hour. Pour over rice in bowls for individual servings.
